Mediterranean inspired one-dish recipe!

I’ve got a GREAT Mediterranean diet recipe for you today… I love it because it has a comfort-food vibe and… it’s awesome for busy weeknights when you don’t want to think too hard about dinner.


One-Dish Chicken Sausage with Brussels Sprouts


(Serves 2 — double it for 4 meals)


●     1 cup peeled and cubed sweet potatoes, roasted


●     2 organic apple-flavored chicken sausages (like Aidell’s or Applegate)


●     1 Tbsp olive oil, divided


●     10 oz bag of shaved Brussels sprouts



Heat 1 tsp oil in a large skillet over medium heat. Dice sausages and cook until golden brown, 4-5 minutes. Remove and set aside.



Heat the remaining oil. Add Brussels sprouts and cook, stirring, 4-5 minutes until caramelized.



Add sweet potatoes and sausage; stir to combine. Season with salt and pepper, if desired.
