
This Cucumber Avocado Salad is not only delicious, it also makes for a great snack or side dish.
And if you need a little protein kick, add some chilled, cooked shrimp.
The secret to this recipe is letting those fresh veggies soak up all the goodness of the dressing — so don’t rush this part!
Cucumber Avocado Salad
(Makes 4 servings)
Ingredients
¼ cup sweet onion, sliced thin
1 lemon, juiced
3 Tbsp extra-virgin olive oil
1 Tbsp each of thinly sliced fresh mint & basil
½ tsp pink Himalayan salt
1 cucumber, thinly sliced
4 plum tomatoes, seeded and diced
1 avocado, halved, pitted, and cubed
How to make it:
● Toss the onion with lemon juice in a large bowl and let it soak for 10 minutes.
● Add the olive oil, herbs, and salt—whisk to combine.
● Add the cucumber to the bowl, tossing to coat well, and let it stand for another 10 minutes, gently stirring every few minutes.
● Stir in the tomatoes, and then gently fold in the avocado.
● Transfer to a platter, serve, and enjoy!
